It was an important staple food back in medieval times and it continues to be wonderfully nutritious food today.
Spelt flour contains less gluten than regular wheat and has a higher protein content. Some people with gluten sensitivities may be able to better tolerate spelt flour.
How does it taste?
Spelt flour tastes very much like wheat but sweeter and nuttier. It is often compared to the taste of farro. It makes for a good hearty bread or other baked goods. To lighten it up a bit you can always use 50/50 all purpose flour and spelt flour if desired.
