Spleen has a very beefy flavor! There are a few ways to cook beef spleen. Before cooking, always marinate in buttermilk or a water/vinegar mixture. This will help lighten the flavor and smell.

  • Braised: Braising is a slow cooking method that helps to tenderize the spleen. To braise beef spleen, brown it in a pan over medium heat. Then, add some liquid, such as beef bone broth, and cook the spleen for 1-2 hours, or until it is tender.
  • Roasted: Roasting is another good way to cook beef spleen. To roast beef spleen, preheat your oven to 350 degrees Fahrenheit. Season the spleen with Celtic salt and pepper, and place it in a baking dish. Roast the spleen for 30-45 minutes, or until it is firm and white throughout.
  • Grilled: Grilling is a quick and easy way to cook beef spleen. To grill beef spleen, preheat your grill to medium heat. Season the spleen with Celtic salt and pepper, and grill for 5-7 minutes per side, or until it is firm and white throughout.
You can toss it in stews or curries, stuff it and bake it, slice it for sandwiches or a main dish, or even puree it into a dip or pâté.

As the seasons allow, our cows are raised in the open pasture or field. They are 100% grass-fed and finished, which means they only eat their natural diet of grasses and what they forage on pasture. In the colder months, they have hay and free choice organic nutrients in the barn.

Our cows are NEVER supplemented with grain feed. Our goal is to raise the healthiest and happiest animals possible!
+
What breed are your cows?
Our beef cows are Black Angus.

What is the fat/lean ratio of ground beef?
We estimate it to be 80% lean, 20% fat.

Do your cows get mRNA vaccines?
Nope! At Miller's, it's a hard no for mRNA vaccines. None of our animals have or will get them. While we're on the topic, none of our farmers vaccinate their animals at all!
