This tender cut is the perfect steak for one or two people to enjoy!
The petite tender is cut from the chuck, or shoulder, section of the steer. It is a small, lean muscle with a long grain that cooks up almost as tender as a filet! The petite tender looks like a pork tenderloin, and can be prepared in virtually the same way.
No need to break the bank to enjoy an incredibly tender and flavorful steak.
Marinate in an herbaceous sauce, or simply coat in butter, salt and pepper and cook in a 400 degree oven to your desired internal temperature. Or, cook it over indirect heat on the grill before searing over high heat for a nice crisp crust.
Let the steak rest for 10 minutes, so the juices can redistribute back into the meat, then slice into medallions and serve.
