Apple Cider Braised Grass-Fed Roast

There's something about the first cool evening of fall that makes me want to pull out the Dutch oven and let dinner take its sweet time. This apple cider braised roast is exactly that kind of meal. A grass-fed chuck roast gets a deep, golden sear, then settles into a bath of fresh apple cider, sweet onions, and garlic, where it braises low and slow until it falls apart at the touch of a fork. The cider does double duty here: its natural sweetness caramelizes into a rich, glossy sauce, and its gentle acidity helps tenderize the beef as it cooks. That matters with grass-fed beef, which is leaner than grain-fed and rewards patience with a deeper, beefier flavor that conventional roasts just can't match. The whole thing comes together in one pot with about 20 minutes of hands-on work, and your house will smell like autumn all afternoon. Spoon it over buttered egg noodles, mashed potatoes and don't skip the extra sauce. It's the kind of cozy, make-ahead pot roast that tastes even better the next day, if there's any left.

Ingredients
- Chuck Roast
- (2, sliced) Sweet Onions (2lb)
- (4 stalks, diced) Celery (1 head)
- (6 Tablespoons) 1lb Raw Salted A2/A2 Butter
- (3 cloves, minced) 8oz - White Garlic
- (1/2 pound, peeled, whole) Carrots (2lb)
- (3-4 cups) Apple Cider
- (Dried, 1 Tablespoon) Rosemary
- (To Taste) Sea Salt
- (To Taste) White Pepper
Directions
- Preheat your oven to 275°F.
- In the Dutch oven on top of the stove combine 3T butter & the thawed roast.
- Sear all sides of your roast & season with sea salt.
- Remove the roast from the stovetop.
- Add in 2 rough sliced/chopped onions, 4 diced celery stalks & 3 minced cloves of garlic. Sautè until tender.
- Add in 1 cup of apple cider & 3 T of butter. Cover and let simmer for 5 minutes.
- Add the roast back into the Dutch oven, season with rosemary, garlic powder, and white pepper.
- Add in 1/2 pound of peeled carrots, 2 diced apples and 2 cups of apple cider.
- Cover and place in the oven for 5 hours or until fall apart.
- Serve with mashed potatoes or buttered noodles and enjoy!
Pro tip: Thicken some of the sauce with a cornstarch slurry to get a delicious apple gravy!
