Crispy Salami & Egg Breakfast Hash

Ingredients
- (1 pack, diced) Sliced Beef Pepperoni Salami
- (3, diced) Yukon Gold Potatoes (2lb)
- (1, diced) Sweet Onions (3lb)
- (1, diced) Bell Pepper
- (2 Tablespoons) 1lb Raw Salted A2/A2 Butter
- (4) 1 dozen - Brown Honest Yolk Chicken Eggs
- (to taste) Fine Pink Himalayan Salt, 1lb
- (to taste) Black Pepper
- (1/2 teaspoon) Smoked Paprika
- (To garnish) Dried Chives
Directions
1. Heat a large skillet over medium heat. Add diced salami and cook until crispy (4–5 minutes). Remove and set aside.
2. Add butter to the pan along with potatoes. Cook about 10 minutes until golden and crispy.
3. Stir in onions and peppers and cook another 5 minutes.
4. Return salami to the skillet and sprinkle with smoked paprika.
5. Make small wells and crack eggs into the hash. Cover and cook until eggs are set.
6. Finish with Chives.
