I think it’s fair to say that the star of this show is the marrow. Our 100% grass-fed osso buco is a beef shank that is cooked with bone in the middle. As it cooks, the bone marrow releases to make a rich flavorful broth that is essential to the finished meal. We're talking maximum collagen which leads to maximum goodness! It's a delicious dish, and something that everyone should try at least once!

The beef soup bones (aka osso buco) should last up to a year in the freezer. You can slow thaw in the fridge or quick thaw in a bowl of cold water. Once thawed, it will last 3-5 days in the fridge.

Meaty soup bones are also perfect for making a classic Sunday ragu. Let the bones cook with tomatoes and onion for several hours before removing the bones, shredding the meat, and adding it back in.

A tomato, wine, and beef broth sauce totally adds tang and sweetness, which is oh-so-perfect with the beef.

Gremolata, a garlic, lemon zest, and parsley sauce is a great addition to serve on top for a fresh kick.

Make sure to pull your beef from the fridge 30 minutes prior to cooking to bring to room temp. This helps it cook evenly.

As the seasons allow, our cows are raised in the open pasture or field. They are 100% grass-fed and finished, which means they only eat their natural diet of grasses and what they forage on pasture. In the colder months, they have hay and free choice organic nutrients in the barn.

Our cows are NEVER supplemented with grain feed. Our goal is to raise the healthiest and happiest animals possible!

Do your cows get mRNA vaccines?
Nope! At Miller's, it's a hard no for mRNA vaccines. None of our animals have or will get them. While we're on the topic, none of our farmers vaccinate their animals at all!
