The combination of how we raise and feed our pigs gives them a unique flavor profile, and the low-stress raising method makes the meat more tender.

Our boneless pork chops come frozen and vacuum-sealed to maintain freshness. For best use, store in the freezer for up to 1 year, or in the refrigerator for 3-5 days.

You can slow thaw in the refrigerator overnight. Or quick thaw in a bowl of cold water, changing the water every 20-30 minutes until thawed.

For perfect chops every time, first give them a soak in a salt water brine for 30 minutes or up to 4 hours, this helps the pork chops retain moisture and stay tender while cooking. Then, quickly sear them in a hot pan or a cast iron skillet for 2-3 minutes on each side, before transferring to the oven at 350F for 20-30 minutes to finish cooking. Boneless pork chops are tender and can overcook and dry out easily, we recommend salt brining to ensure the most moist pork chops. Our pork chops pair well with rosemary, sage, garlic, apples, and barbeque sauces.

Our pigs are raised in the woods. In addition to the nuts and roots and other foraged foods they find solo, the pigs are fed lots of skim milk and a corn & soy free feed. The feed contains a blend of peas, fish meal, seashell flour, alfalfa meal, wheat middlings, kelp, probiotics, vitamins, and minerals.
