Our chicken feet will last about 1 year in the freezer. You can slow thaw in the fridge or quick thaw in a bowl of cold water. Once thawed, it will last 1-2 days in the fridge.

Chicken feet can be made a few different ways. Fried, boiled, braised, steamed or simmered.

In a large stock pot or dutch oven, place chicken feet, water, onions, carrots, celery, peppercorns, and any herbs you want to add. Turn the heat to medium and bring to a simmer. Cover with a lid and turn down to low. Allow the broth to simmer for 6-8 or more hours. Strain with a fine mesh strainer into jars and store in the fridge.

Our chickens forage for countless seeds and bugs in the regeneratively farmed pasture. They are moved often in mobile coops. They are given free access to a feed, which contains a specially formulated blend of wheat, peas, barley, fishmeal (from sardines), flax seed, kelp, vitamins, and minerals.

During processing, what is your chicken washed in?
No bleach, citric and lactic acids, or yucky chemicals here. Our chicken is air chilled, and that means it's washed in nothing at all! Only water touches our birds.

Why is your chicken air-chilled?
Air chilling allows for healthier and safer chicken by eliminating the risk of shared bacteria. When a product is air chilled, there is no added water weight, so you are getting exactly what you paid for. No added chemicals or water are used during the air chilling process, therefore a full and robust flavor is found when our chicken is served.

What is "pastured chicken"?
Miller’s pastured chicken comes from birds that are allowed to forage for countless seeds and bugs in the pasture, in addition to the corn/soy and GMO free feed. They live in mobile coops in pasture for as long as the weather allows them, giving them space and freedom to run.

Is the skin and nails still on the chicken feet?
Yes! The skin is still on the chicken feet and the inner part of the nail is still on, but the dirty outside protective layer has been removed. You can use poultry shears to cut the nail off.

How do I clean the chicken feet for cooking?
To prepare chicken feet for cooking, begin by thoroughly washing them in cold water. Next, clip off the toenails and remove any skin or hair that may be present. For cleaning, a hot water dip followed by scrubbing with lemon juice, lime juice, or vinegar can help loosen any remaining debris. Finally, rinse the feet thoroughly in cold water.

Why are chicken feet good for broth?
Because they are rich in collagen. When cooked long enough, the collagen is released, turning into gelatin. So after the broth is cooled, you will get the thickest, most gelatinous broth. Collagen is beneficial for skin, joints, hair, gut health, and more.

The chicken is packaged in HDPE plastic, which is the most environmentally stable of all plastics. It does not contain BPA, phthalates, heavy metals, harmful fumes, or allergens. But all plastic has the potential to leach chemicals.
