The flank steak comes from the lower midsection of the cow. It is a flat steak with a long grain and deep flavor. This versatile, easy to cook steak can be prepared in a variety of ways:

-Coat with a dry rub (garlic, chili powder, paprika) and sear for a couple minutes on each side.

-Slice into thin strips and toss with vegetables and soy sauce to make a flavorful stir-fry.

-Braise low and slow in a rich tomato-based sauce.
