The bees are on our farm when the flowers are blooming and are moved to wild foraging areas around the United States in the colder months. This is so the bees always have work to do and nectar to collect.
Storage Tips: Honey is best stored at temperatures above 77°F to avoid crystallization. The lower the temp, the faster the honey will crystallize.
Crystallization: If it's the real deal raw honey (never heated or altered in any way), it will eventually turn solid and crystallize. If crystallized honey is left for too long, it will ferment. There's nothing you can do to prevent this. Read more about honey crystallization here.
How to De-Crystallize Honey: Take a large bowl, fill it with warm water, and let your honey sit in it until the crystals melt away. Just make sure to heat the honey to no more than 104F to maintain all the beneficial microbiology.
