Our pork chops come frozen and vacuum-sealed to maintain freshness. For best use, store in the freezer for up to 1 year, or in the refrigerator for 3-5 days.

Pork chops are tender and can overcook and dry out easily, we recommend salt brining to ensure the most moist pork chops. Give them a soak in a salt water brine for 30 minutes or up to 4 hours before cooking. This helps the pork chops retain moisture and stay tender while cooking.
Seal in those juices by giving the chops a quick sear in a hot pan or a cast iron skillet for 2-3 minutes on each side. Then, transfer to the oven at 350F for 20-30 minutes to finish cooking.

Our pigs are raised in the woods. In addition to the nuts and roots and other foraged foods they find solo, the pigs are fed lots of skim milk and a corn & soy free feed. The feed contains a blend of peas, fish meal, seashell flour, alfalfa meal, wheat middlings, kelp, probiotics, vitamins, and minerals.
