Our pork kidneys come frozen and vacuum-sealed to maintain freshness. For best use, store in the freezer for up to 1 year, or in the refrigerator for 3-5 days.

You can slow thaw in the refrigerator overnight. Or quick thaw in a bowl of cold water, changing the water every 20-30 minutes until thawed.

Kidneys can be tough, and require a long cooking time. They also must be cleaned before cooking, (they've got sort of a funky smell to them).
  • Begin by removing as much of the fat and sinew (fibrous tissue) from the kidney as possible.
  • Soak kidney's in milk for at least 2 hours-overnight to help remove impurities, smells, and soften the meat.
  • Bring a pot of water up to boil with the soaked kidney's in it. Cook them for about 30 seconds. They should be gray in color on the outside but not fully cooked. This step is to get rid of the blood scums in your cooking. Do not overcook them or they will turn tough.
  • Cube the kidneys and cook as desired.
Pork kidneys can be used in tons of dishes, like stews, stir-fries, savory pies, and soups. They pair well with strong, acidic flavors like mustard, onions, tomatoes, mushrooms, and herbs.

Our pigs are raised in the woods. In addition to the nuts and roots and other foraged foods they find solo, the pigs are fed lots of skim milk and a corn & soy free feed. The feed contains a blend of peas, fish meal, seashell flour, alfalfa meal, wheat middlings, kelp, probiotics, vitamins, and minerals.

What are the health benefits to eating pork kidneys?
Pork kidneys pack a punch of protein, amino acids, iron, and a ton of vitamins like C, D, K, B, A. Plus, they've got phosphorus, niacin, and copper, too.

Why do pork kidneys have a funky smell to them?
Kidneys are like the pig's own personal Brita filter! They clean out all the junk from the blood, but that means they can get a bit stinky from stuff like urea and uric acid.

How many kidneys does a pig have?
Just like humans and every other animal, pigs have 2!

If kidneys are the animal's filter, should I be worried about impurities?
Yes, this is definitely a concern with conventionally raised animals who are given routine drugs, fed grains sprayed with chemicals, etc. But since our pigs are raised as naturally as possible, there's little worry about that yucky stuff.

Our pork kidneys are packaged in HDPE plastic, which is the most environmentally stable of all plastics. It does not contain BPA, phthalates, heavy metals, harmful fumes, or allergens. But all plastic has the potential to leach chemicals.
