This budget friendly cut offers up some big taste!
Pork shank is the lower portion of the pork leg. It consists of a marrow filled bone surrounded by muscle, fat, and connective tissue.
The meat is tough unless cooked low and slow to give everything time to melt together.
We recommend braising or roasting the pork shanks then serving with polenta or mashed potatoes to soak up all of the delicious juices.
Don't waste a bit of the pork shank!
