Our pork shanks come frozen and vacuum-sealed to maintain freshness. For best use, store in the freezer for up to 1 year, or in the refrigerator for 3-5 days.

You can slow thaw in the refrigerator overnight. Or quick thaw in a bowl of cold water, changing the water every 20-30 minutes until thawed.

When you're braising, you can use pretty much any liquid you have lying around; white or red wine, vinegar, vermouth, beer, stock, or even water will do the trick!

The first step to making a tasty braised shank is to brown the meat. It doesn't matter what flavors you add, searing the meat first will make the dish so much better!

Those little browned bits that stick to the pan are flavor bombs, adding a rich, deep flavor to the braising liquid and making the final dish super tasty.

Our pigs are raised in the woods. In addition to the nuts and roots and other foraged foods they find solo, the pigs are fed lots of skim milk and a corn & soy free feed. The feed contains a blend of peas, fish meal, seashell flour, alfalfa meal, wheat middlings, kelp, probiotics, vitamins, and minerals.

What part of the pig does the shank come from?
So, basically, a pork shank is a piece of meat that comes from the lower leg of a pig. It's usually from the front leg, around the knee area. It consists of a marrow filled bone surrounded by muscle, fat, and connective tissue.
