Our pigs are raised in the woods. In addition to the nuts and roots and other foraged foods they find solo, the pigs are fed lots of skim milk and a corn & soy free feed. The feed contains a blend of peas, fish meal, seashell flour, alfalfa meal, wheat middlings, kelp, probiotics, vitamins, and minerals.

What breed are your pigs?
Our pigs are heritage breeds: Berkshire, Duroc, Red Waddle, and Black Crosses.

Do your pigs get mRNA vaccines?
Nope! At Miller's, it's a hard no for mRNA vaccines. None of our animals have or will get them. While we're on the topic, none of our farmers vaccinate their animals at all!

What is the starter culture in the salami?
The starter culture has lactobacillus in it to basically aid in the natural fermentation of salami.

Are the spices organic?
No, they aren't certified organic. Our Italian salami maker imports them from Italy, where the best of the best flavors can be found. The spices are grown in Europe to EFSA (European Food Safety Authority) standards. And, that means that there are fewer chemical residues and additives compared to American spices.

Is your salami probiotic?
Yes, it is! Our salami is made the old fashioned way, with fermentation. It gives it that old fashioned flavor (so yummy) and also means that there are live cultures in the final product. This makes our salami easier to digest and healthier for the gut.

The sliced pork casareccio salami contains celery juice powder, which contains naturally occurring nitrates and nitrites.

The salami is packaged in HDPE plastic, which is the most environmentally stable of all plastics. It does not contain BPA, phthalates, heavy metals, harmful fumes, or allergens. But all plastic has the potential to leach chemicals.

The beef casings are not from our cows. They are simply cow intestines (no weird lab produced ingredients like vegetarian casings), but they are from conventional cows. Other than our 100% grass fed and finished beef, the ingredients used in the casings are conventional.
