Apple Raisin Pork Chops

There's something special about a meal that tells a story from start to finish. These woodland-raised pork chops come from pigs that roamed freely among the trees, foraging and living the way nature intended and you can taste that difference in every single bite. Paired with tender caramelized apples and plump, juicy raisins, this dish is the kind of sweet-and-savory comfort food that makes you want to slow down, pull up a chair, and savor the moment.

Ingredients
- (2) Pork Chops
- (2) 1lb - Honeycrisp Apples
- (1) Yellow Onions (2lb)
- (1 Tablespoon) 1 quart - Beef Tallow (Glass)
- (Drizzle) Raw Local Spring Wildflower Honey, 2lb (Glass)
- (1/4 cup) Raw Apple Cider Vinegar
- (1/4 cup) Raisins
- (1 teaspoon) Ground Black Pepper
- (1 teaspoon) Fine Pink Himalayan Salt, 1lb
- (2 large leaves) Fresh Sage
Directions
- Peel and slice apples and grate an onion.
- Add to a casserole dish with sage, raisins, apple cider vinegar, salt, and pepper. Set aside.
- Add beef tallow into a heated skillet and brown the chops over high heat for 1 minute per side or until browned.
- Remove from heat and place over your prepared fruit and vegetables.
- Drizzle with honey.
- Cover and roast at 350F for 1-1/2 hours or until fork-tender.
- Add to plate and pour over some of the pan drippings for extra flavor.
- Optional - pairs nicely with chive potato puree!
