Protein Pumpkin Pie Pudding Parfaits

This high-protein, no-bake dessert tastes just like a slice of pumpkin pie! It's made with our whipped A2/A2 cottage cheese, pure pumpkin, and autumn spices, and is naturally sweetened with a blend of our pure maple syrup and raw honey and layered with creamy Greek yogurt. It is the perfect healthy way to enjoy fall flavors while easily hitting your protein goals.

Ingredients
- (1.5 cups) 1 pint - Raw Unsalted A2/A2 Cottage Cheese
- (1/2 cup) 1 quart - Raw Greek A2/A2 Yogurt (Glass)
- (1/2 cup) Cream Cheese
- (1 cup, purée) 1 - Pumpkin Pie Pumpkin
- (1/4 cup) Maple Syrup, 1 Pint (Glass)
- (1 teaspoon) Homemade Vanilla, 4oz
- (1 Tablespoon) Cinnamon Powder
- (1-2 teaspoons) Pumpkin Pie Spice Powder
- (1/4 teaspoon) Fine Pink Himalayan Salt, 1lb
- (optional, drizzling on top) Raw Local Mountain Wildflower Honey, 8oz (Glass)

Instructions
- Add the cottage cheese and cream cheese to your food processor or high-speed blender.
- Whip them together for 1 to 2 minutes, or until they are perfectly smooth and light with no curds remaining.
- Add the pumpkin puree, maple syrup, vanilla extract, cinnamon, pumpkin pie spice, and salt directly into the food processor with the whipped cheese mixture.
- Process again until the mixture is uniform in color and completely smooth.
- Chill - (Recommended): Transfer the Pumpkin Pie Protein Pudding to an airtight container and refrigerate for at least 1 hour to allow the spices to bloom and the pudding to set.
- Assembling the Parfaits - Scoop the Pumpkin Pie Protein Pudding into your serving glasses. Add a few layers of creamy Greek yogurt (or A2/A2 raw whipped heavy cream) between the pudding layers.
Optional Topping: A drizzle of raw honey and chopped pecans if desired.
