Veggie Loaded Pork Meatballs

I am a huge fan of meatballs! When it comes to getting a lot of nourishing ingredients into my kiddos bodies meatballs are the way to go! These meatballs taste great warm or cold and freeze well too. I enjoy these topped onto salads or grain bowls and my kids eat them straight up dipped into Greek yogurt for a snack or mini meal.

- Servings: 20 meatballs
Ingredients
- (1 pound) Ground Pork
- (3/4 cup, grated) Carrots (1lb)
- (3/4 cup, grated (squeeze excess liquid out)) Green Zucchini (2lb)
- (1/2 cup, finely minced) Swiss Chard
- (3, minced) Green Onions
- (1/2 teaspoon) Dried Thyme
- (1/2 teaspoon) Dried Parsley
- (1/2 teaspoon) Dried Oregano
- (1/2 teaspoon) Fine Celtic Sea Salt, 8oz
- (To taste) Black Pepper
Directions
Preparation
- Preheat the oven to 350F.
- Lightly grease a baking sheet and set it aside.
- Combine all the ingredients together in a large bowl and mix well.
- Form the mixture into 2 Tablespoon size meatballs.
- Bake for 20 minutes or until cooked through.
- Serve meatballs with yogurt or your favorite condiment.
