Curtido is a pickled cabbage slaw that hails from El Salvador!

Traditional curtido like ours always includes cabbage and carrots. In addition there is usually a spicy kick from chili peppers and herbaceous flavors from oregano.

Raw fermented foods like curtido are excellent sources of probiotics, especially lactobacillus, which aids in digestive health.

Our cultured vegetables are from a local organic farm that uses old world techniques to grow and ferment its products.

Honest Disclosure: About 1 teaspoon of whey is used to make 1 quart of fermented veggies. The whey is a byproduct of making pasteurized cheese, and it's not A2/A2. The living microbiology from cheesemaking is what jumpstarts the ferment.
