Keep the mushrooms dry. Avoid washing until you're ready to cook. Store in a paper bag which will allow for air circulation and help prevent excess moisture buildup, which can lead to spoilage. Use the mushrooms within 1-3 days. If you want to freeze them to prolong their shelf life consider sautéing first. Lion's mane mushrooms have a high water content, so sautéing before freezing can help preserve their texture.

 You can use them to make seafood cakes and so much more. Combine shredded lion's mane with your typical crab cake ingredients like pastured eggs, mayonnaise, Dijon mustard, and einkorn breadcrumbs, then pan-fry until golden brown. Serve with a wedge of lemon!
