Apple Pork Stuffing

Ingredients
- (1/2 loaf cubed) Einkorn Sourdough Bread, Large
- (1, diced) Yellow Onions (2lb)
- (1 cup, diced) Celery (1 head)
- (2, diced) 1lb - Honeycrisp Apples
- (1#) Ground Pork
- (1 cup) Raw Apple Cider
- (splash) Maple Syrup, 1 Pint (Glass)
- (2, beaten) 1 dozen - Brown Honest Yolk Chicken Eggs
- (2 tsp) Fine Pink Himalayan Salt, 1lb
- (1 tsp) Ground Black Pepper
- (2 tsp) Dried Sage
- (3 Tbsp) 1lb Raw Salted A2/A2 Butter
Directions
- Preheat your oven to 350F.
- Dice your celery, onions and apples.
- In a Dutch oven, pot or pan add butter and saute the veggies and apples until soft and translucent.
- While the veggie mix is cooking dice your bread into small cubes and set aside
- Remove the veggie mix from the pan and add in the pork.
- Season with salt and pepper and some of the dried sage. Cook until browned.
- Add some of the apple cider in with the pork and cook for another 3 minutes then remove from the heat.
- In a large bowl combine the bread cubes, veggie mix, cooked pork and the beaten eggs.
- Add in the rest of the apple cider and the splash of maple syrup.
- Toss together until everything is coated evenly.
- Place in a 9x13 pan and bake for about 35-40 minutes.
