Balsamic Braised Grass-Fed Short Ribs

Braised short ribs are the kind of dinner that makes your kitchen smell like a promise. This version leans on white wine for brightness and balsamic for that deep, almost-sweet backbone, a combination that keeps grass-fed beef from ever tasting heavy. And grass-fed is the point here: cattle raised on pasture instead of a feedlot give you beef with real character, not the washed-out sameness of the grocery-store case. All it asks of you is a good sear and a few unhurried hours in the oven. The oven does the rest.

Ingredients
- (4#) Beef Short Ribs
- (4 Tablespoons) 1lb Raw Salted A2/A2 Butter
- (2, one rough chopped, one sliced) Sweet Onions (3lb)
- (2 cloves, minced) Garlic Bulbs (8oz)
- (4 teaspoons. or to taste) Fine Pink Himalayan Salt, 1lb
- (1/2 cup) Organic Balsamic Vinegar
- (1 1/2 cups) Organic White Wine (dry)
- (1 Tablespoon) Herbs De Provence
- (1 teaspoon) Black Pepper
Directions

- Heat up your Dutch oven. Add in your butter, garlic and minced onion and cook for 5 minutes.
- Season and sear. Pat the short ribs very dry, then season generously with salt and pepper. Heat the butter or tallow in a Dutch oven over medium-high. Working in batches so you don't crowd the pot, sear the ribs on all sides until deeply browned, about 3 minutes per side. Set aside. (Don't rush this — the browning is where half the flavor lives.)
- Build the base. Lower the heat to medium. Add onion on top of the short ribs cook about 5–6 minutes.
- Pour in the white wine and balsamic on top of the ribs, yep that's right, keep everything in the pot.
- Season with herbs de Provence and any other herbs or additional salt to your liking. Bring to a gentle simmer, cover, and transfer to a 325°F oven.
- Wait (the hard part). Braise for 2½ to 3 hours, until the meat is fork-tender and pulling from the bone. Grass-fed beef can be a bit tougher than grain-finished, so let tenderness be your cue rather than the clock, check at 2½ hours and give it more time if it needs it.
- Finish. Taste, adjust salt, and spoon the sauce over the ribs to serve.
Serve with: creamy mashed potatoes, buttered egg noodles, soft polenta, or crusty bread, anything that'll soak up that sauce.
