Crispy Pastured Pork Chops with Apple-Onion Pan Sauce

This is fall comfort food in about 30 minutes, and one skillet does all the work. Pasture-raised pork makes the difference here: it's juicier, richer, and has real flavor, so it can handle a hard sear without drying out.

Ingredients
- (2) Pork Chops
- (2 sliced, thinly) 1lb - Honeycrisp Apples
- (1, sliced) Sweet Onions (2lb)
- (2 Tablespoons) 1lb Raw Salted A2/A2 Butter
- (1 Tablespoon) Maple Syrup, 1 Pint (Glass)
- (1/2 cup) 1 quart - Chicken Bone Broth (Glass)
- (1 teaspoon) Dijon Mustard
- (To Taste) Salt & Pepper
- (1 teaspoon) Fresh Thyme
- (1 Tablespoon) 2lb - All Purpose Einkorn Flour

- Season pork chops generously with salt and pepper.
- Sear in butter over medium-high heat, about 4–5 minutes per side depending on thickness.
- Remove pork and cover.
- Add onion and apples to the pan. Cook until softened.
- Sprinkle with flour and stir.
- Add broth, maple syrup, mustard and thyme.
- Simmer until the sauce thickens.
- Return pork chops to the pan and spoon sauce over them.
Best with: mashed potatoes and roasted root vegetables
