Simple Sausage & Mushroom Pasta

If I can get a nourishing meal for my family on the table in 25 minutes or less, I call that a win! This simple sausage and mushroom pasta is bursting with flavor with minimal ingredients and effort. This is the perfect meal for busy families who don’t want to sacrifice nutrition when they are short on time.

Ingredients
- (1 pound) Garlic Pork Sausage Links (Kielbasa)
- (1/2 cup) 8oz Raw Shredded A2/A2 Mild Cheddar Cheese
- (1/2 cup, finely chopped or shallots) Candy Onions (2lb)
- (8oz, chopped) Cremini Mushrooms (8oz)
- (1/2 pound, trimmed) Green Beans (12oz)
- (8 oz, or your choice) Einkorn Fusilli, 8.8oz
- (to taste) Fine Celtic Sea Salt, 8oz
- (to taste) Black Pepper
Directions
- Prepare the pasta according to package directions. During the last 3 minutes of cooking add the green beans.
- Drain the pasta and beans, reserving ½ cup of the cooking liquid.
- Heat a large cast iron skillet over medium heat.
- Add the pork and cook, breaking up the meat a bit, until lightly browned and cooked through. Remove with a slotted spoon to a plate and keep to the side.
- Add the shallot and mushrooms to the skillet with the leftover drippings. If need be add a touch of ghee or butter to the pan. Cook until the veggies are tender, about 8 minutes.
- Add the sausage back to the pan with the veggies and stir in the pasta and beans.
- Add the reserved cooking liquid along with the grated cheese.
- Season to taste with salt and pepper.
