Simple White Bean & Ham Soup

Who doesn’t love a one-pot meal on a busy weeknight? As a busy mom of two young kiddos this is my kind of nourishing meal. I love that this soup is high in protein, jam packed with veggies that my kids will actually eat, and makes excellent leftovers for the week. Bonus, it freezes well too! Enjoy.

Ingredients
- (1 pound, cubed) Ham Slice (Smoked, Boneless)
- (4 cups- or pork bone broth) 1 quart - Chicken Bone Broth
- (2 Tablespoons) 1 pint - A2/A2 Ghee (Glass)
- (2 stalks, finely chopped) Celery Stalks
- (1, finely chopped) Yellow Onions (2lb)
- (2, finely chopped) Carrots (1lb)
- (4 cloves, minced) 8oz - White Garlic
- (2 teaspoons) Dried Thyme
- (Fat pinch) Fine Celtic Sea Salt, 8oz
- (2-15 oz jars, rinsed and drained) Navy Beans
- (To Taste) Ground Black Pepper
Directions
- Heat the ghee in a large dutch oven over medium high heat. Once hot add the onion and cook, stirring occasionally for about 5 minutes. Add the celery, carrots, garlic, thyme and salt. Cook, stirring to coat the veggies in the thyme/salt.
- Pour in the chicken bone broth and bring to a low boil. Reduce the heat to a simmer, add the white beans and the cubed ham. Cook until the veggies are tender. About 30 minutes.
- Season to taste with salt and pepper.
