Ingredients
- (1 Roast) London Broil
- (2.5 Tablespoons) Steak Seasoning
- (1.5 teaspoons) 1 pint - A2/A2 Ghee (Glass)
- (1 Tablespoon) 1lb Raw Unsalted A2/A2 Butter

THE TENDERIZING PREP
- Season Liberally: Apply your dry seasoning blend to the London Broil on both sides.
- The Dry Brine: Place the seasoned steak uncovered in the refrigerator.
- Time is Key: Let it sit for 12 to 24 hours for maximum tenderization.
THE COOKING SECRET
- Bring to Room Temp: Remove the steak from the fridge and allow it to sit on the counter for 30-60 minutes.(This ensures even cooking.)
- Apply Ghee: Just before air frying, rub the steak with a thin layer of melted ghee.
- Final Seasoning: Immediately after the ghee, apply a light, final dusting of dry seasoning to ensure a beautiful crust.
- Air Fry: Place the steak in the preheated air fryer at 400°F for about 15 minutes.
- The Pull Temperature: Use a meat thermometer to check the internal temp. PULL THE STEAK OUT when it reaches 125°F. (It will continue to cook as it rests!)
Move the steak off the heat and let it rest on the cutting board for a full 10 minutes. (This locks the juices inside the meat.)
THE FINAL TOUCH
Slice Against the Grain: This is the most critical step for this cut. Find the long muscle fibers and slice perpendicular (across) them for a tender bite. Drizzle with A2/A2 butter and sea salt of desired.
