Raw Matcha Frozen Yogurt
Creamy, earthy, and refreshing, this raw matcha frozen yogurt blends the rich umami of premium Japanese green tea with the smooth indulgence of velvety dairy. Its pale green hue hints at the deep, grassy flavor within—subtly sweet, slightly bitter, and perfectly balanced. Ingredients

Directions

  1. In a bowl combine 3 pastured egg yolks. Try to get as much egg whites off of the yolks as possible.
  2. Add in your maple syrup and whisk.
  3. Add in the raw cream, raw milk, raw yogurt, vanilla, and whisk. 
  4. Add in your matcha powder and whisk vigorously. 
    1. *This is when you add in any other flavor inclusions, dried lavender, lemon zest, coconut, berries, ect. 
  5. You can age your base up to 24 hours for more of a deeper flavor. If you do this be sure to store it in the back of the fridge covered.
  6. Using a frozen ice cream bowl mixer attachment, or ice cream machine. Pour the mixture in and churn for about 15-20 minutes or until it's fluffy and frozen.
  7. Store in a container in the freezer.

*Once frozen in the freezer raw ice cream will not be super fluffy like conventional ice creams with all the added junk. Remove from the freezer and let it thaw for a few minutes.
