Spinach & Green Garlic Chicken Patties with Garlicky Mayo

These healthy spring inspired chicken patties come together in less than 20 minutes for a delicious, high protein meal. Serve them with roasted potatoes, rice or a simple salad for a complete meal.

Ingredients
- (1 pound) Ground Chicken
- (For frying) 1 pint - A2/A2 Ghee (Glass)
- (1 cup, diced) Fresh Spinach
- (2 stalks, diced) Green Garlic
- (1/4 cup) Almond Flour
- (3/4 teaspoon) Fine Celtic Sea Salt, 8oz
Directions
- 1 stalk green garlic, minced (or 1 clove of garlic)
- 1 cup home-made mayo or store-bought
Garlic Mayo
- Combine all the ingredients for the patties in a large bowl. Use your hands to form the mixture into 6 small patties. This mixture is pretty wet so if need be, wet your hands or place the mixture in the freezer for a few minutes.
- Heat a little ghee in a large cast iron skillet over medium-high heat. Add the patties and cook for about 4-6 minutes per side or until cooked through.
- Mix the garlic with the mayo. Serve with the chicken patties and enjoy!
