Grass Fed Beef Tongue Tacos

If you're looking to shake up your taco night, give beef tongue a try! I know, I know. It might sound a little wild at first, but trust me. Once you taste it, you'll be hooked. It's super flavorful, tender, and full of nutrients your body will love.
Ingredients
- (2) Beef Tongue
- (1 whole clove) 8oz - White Garlic
- (3 Leaves) Dried Bay Leaves
- (1 whole onion (Peeled)) Yellow Onions (2lb)
- (To taste) Fine Celtic Sea Salt, 8oz
- (1) Mangoes (2 pack)
- (1) Red Onions (2lb)
- (1) Roma Tomato
- (1/2 bunch) Cilantro
- (1 (optional)) Jalapeño
- (1-2 Tbsp) Lime Juice

How To Make Beef Tongue Tacos
- Rinse & Prep the tongue
- Cut them into large chunks: This helps cook it faster.
- Add to pot: Add the tongue to a large pot of water. Toss in the garlic, bay leaves, onion, and a generous amount of salt.
- Bring to a boil & Simmer: Then lower the heat and simmer for about 1.5 to 2 hours or until meat is tender.
- Peel the Tongue: Once fully cooked, remove a few chunks at a time. (keep the rest warm in the pot). While still hot, carefully peel off the thick outer skin. It’s easier when hot, but be careful not to burn your fingers! (Heat-resistant gloves help.)
- Slice or Shred: Once peeled, slice the tongue thinly or shred it with a fork. (Both are yummy!)
- Heat Pan To Medium Heat: Add a bit of ghee, oil, or butter.
- Crisp Meat: Add tongue and saute until edges are crispy or golden brown.
- Sprinkle Salt: I used a pinch of Salt.
- Build Your Tacos: Warm your tortillas, add the tongue, add your fav toppings
