Chicken Liver Pate

Delicate, meaty, creamy and delicious with butter, sage and rum extract that adds woody and sweet notes. If you're not a big fan of liver give this recipe a try! You'll be surprised how the flavor changes when prepared with the right ingredients.

Ingredients
- (1lb) Chicken Livers
- (3 Tbsp) 1lb Salted A2/A2 Butter
- (3 large) Shallots, 8oz
- (2 tsp) Miller's Raw House Honey, 8oz (Glass)
- (1/4 cup) Water
- (1tsp) Rum Extract
- (1/4 cup, fresh) Sage Leaves
- (1/4 tsp) Allspice
- (1.5 tsp) Fine Celtic Sea Salt, 8oz
- (1.5 tsp) Fine Celtic Sea Salt, 8oz
- (1/2 tsp) Black Pepper
Directions
- Heat butter over medium high heat.
- Add diced shallots and cook until fragrant and translucent.
- Add liver, seasonings and sage.
- Cook for 2-3 minutes turning the livers.
- Add rum extract and 1/4 cup water and turn heat to high.
- Cook until liquid is almost evaporated.
- Let cool slightly.
- Add livers and 2 tsp of honey to a food processor or blender until smooth.
- Taste and add more seasonings if needed.
- Transfer to a bowl or wide mouth mason jar.
- Enjoy with bread, crackers, veggies or enjoy in a sandwich.
Optional - top with 1 Tbsp melted butter and crispy sage leaves.
