Ingredients
- (3 cups, puréed) Sweet Potatoes (2lb)
- (6, hard boiled) 1 dozen - Brown Honest Yolk Chicken Eggs
- (1 cup) 1 pint - Raw Salted A2/A2 Cottage Cheese (Glass)
- (1/3 cup) 1 pint - Raw A2/A2 Cream (Glass)
- (1 cup, unsweetened) Cocoa Powder
- (1/3 cup, or to taste) Maple Syrup, 1 Pint (Glass)
- (2 teaspoons) Homemade Vanilla, 4oz
- (1/2 teaspoon) Fine Pink Himalayan Salt, 1lb
- ((optional) 2 teaspoons) Cinnamon Powder

- Peel and cube the sweet potatoes, then boil them for 10 to 15 minutes until tender.
- Boil the eggs for 10 to 12 minutes to ensure the yolks are fully set.
- Peel the eggs and drain the potatoes, setting them aside to cool slightly before blending.
- Combine the cooked sweet potatoes, peeled eggs, cottage cheese, cacao powder, maple syrup, half-and-half, vanilla, cinnamon, and salt in a food processor or high-speed blender.
- Process until completely smooth and creamy. Because this pudding is incredibly thick and rich, if your machine is struggling to "grab" the mixture, drizzle in a few extra teaspoons of half-and-half or milk at a time until it blends smoothly.
- Transfer the pudding into ramekins, or small jars.
- Chill in the refrigerator for at least one hour before serving.
