Nourishing Ancestral Beef Chili
Elevate your comfort food with this nutrient-dense, bean-free chili. This recipe features our Ancestral Beef Blend. A powerful combination of grass-fed beef with added organs. If you’ve been curious about adding organs to your diet but are worried about the flavor, this is the perfect "entry-level" recipe. The organ blend adds a deep, savory richness that perfectly complements the seasonings without any off-putting or "iron-like" taste. You won't even know they're there! By swapping traditional beans for tender sliced carrots, we’ve created a hearty, satisfying texture that pairs beautifully with our slow-simmered Bone Broth. It’s a clean, ancestral-style meal that delivers maximum nourishment in every delicious bite.

Instructions

  1.  Heat 2 tsp of Ghee in a large pan over medium heat. Add the sliced carrots and sauté for 2–3 minutes until they begin to soften and slightly brown.
  2.  Add the diced bell pepper and onion to the pan. Sauté for about 5 minutes until the onions are translucent and the peppers are tender.
  3.  Stir in the pressed garlic and cook for just 1 minute until fragrant, being careful not to let it burn.
  4.  Add the Ancestral Beef Blend to the pan. Use a spatula to break the meat apart and cook until it is browned and no longer pink inside.
  5.  Stir in all of your pre-measured seasonings (chili powder, cumin, cayenne, oregano, salt, and pepper). Mix well to ensure the beef and veggies are thoroughly coated in the spices.
  6.  Pour in the diced tomatoes and 2 cups of Bone Broth. Bring the mixture to a light boil, then reduce the heat.
  7.  Let the chili simmer uncovered for about 30 minutes. This allows the liquid to reduce and the flavors to deepen and thicken.
  8.  Ladle into bowls and top with a dollop of our raw sour cream, a generous sprinkle of A2/A2 cheese, chopped cilantro, and a few extra onions.


    Notes

    • For the Kids: If serving children or those sensitive to heat, skip the cayenne pepper and reduce the chili powder by half.

    • Serving Suggestions: Serve with your favorite tortilla chips, crackers, or a slice of sourdough bread.

    • Spice Note: The cayenne is optional but highly recommended if you enjoy a little extra "kick" in your bowl!
