Seared Pork Chops with Mashed Potatoes and Garlic

A dinner that's comforting. Everyone loves a good mashed potato, but combine it with melt in your mouth woodland pork chops and a simple pan sauce, mmmm. You get the picture.

Ingredients
- (4) Yukon Gold Potatoes (2lb)
- (2 cups) 1/2 gallon - Raw A2/A2 Milk
- Boneless Pork Chops
- (1 bulb) 8oz - White Garlic
- (1/2 cup) 1 quart - Beef Bone Broth (Glass)
- (7 Tablespoons) 1lb Raw Salted A2/A2 Butter
- (To Garnish) Green Onions
- (As needed) Avocado Oil
- (To taste) Fine Pink Himalayan Salt, 1lb
- (To taste) Ground White Pepper
Directions
- Remove your pork chop and let warm to room temp.
- Pat dry and season on both sides with salt and pepper.
- Wrap your potatoes in foil and bake at 400 for 1 hour. While they are cooking, simmer the raw milk.
- Once the potatoes are cooked through, slice in half and remove the potato meat into a bowl. Stir in the milk. Add in your raw butter, salt, and white pepper and mix until smooth. Keep warm.
- Add avocado oil to a pan and heat.
- Add garlic and cook until fragrant.
- Add the pork chops and sear on both sides until browned. 5 minutes per side.
- Add 1 tbsp of butter and baste the pork. Get the internal temp to at least 145. Remove from the pan to let rest.
- Deglaze the pan with bone broth and reduce down until thickened (pan jus).
- To plate, drizzle your pan jus in circles. Then, slice the pork diagonally to show the cooked inside. Add potatoes and some green onions for color.

- 4 potatoes
- 2 cups of Raw Milk
- Sea Salt, white pepper
- 6 tbsp raw butter
