Directions

  1. Start by preheating the oven to 350F.
  2. In a blender add in the eggs, salt/pepper, cheddar cheese and cottage cheese and blend on high for 20-30 seconds.
  3. Place a silicone muffin tin on a baking sheet, Or you can use small mason jars, just make sure they are heavily greased (buttered/avocado oil) so you can remove them easily.
  4. Add the egg mixture 3/4 way in each muffin cup.
  5. Carefully position the baking dish with the muffin pan on a lower oven rack. Fill the baking tray with boiling water up to halfway.
  6. Bake without opening the oven for at least 25 minutes or up to 30 minutes. Monitor closely.
  7. Allow them to rest for 5 minutes before enjoying.
  8. Store in the fridge for up to 5 days or freeze for up to 2 months. Defrost in the fridge and reheat in the microwave if frozen. Enjoy!

*You can add in ANY inclusions, cooked bacon, sausage, cheese, peppers, onions, mushrooms, the possibilities are endless!
