Roasted Bone Marrow with Raw Goat Kidchego Cheese

Ingredients
- (2-3 Marrow Bones) 3 pack - Canoed Beef Marrow Bones
- (1 tsp) 8oz Raw Goat Kidchego Cheese
- (1 Tbsp) 1lb Raw Cultured Unsalted A2/A2 Butter
- (3-4 Slices) Sourdough Bread
- (3 Tbsp) Parsley, finely chopped
- (1/2 Tbsp) 1lb - Yellow Onions
- (1 Clove) 8oz - White Garlic
- (1/2 tsp) Lemon Juice
- (1/4-1/2 tsp) Capers
- (to taste) Fine Celtic Sea Salt, 8oz
- (to taste) Pepper
Directions
- Preheat oven to 375F
- Remove excess meat and tissue around the bones
- Season bones with salt and pepper
- Roast for 10-15 mins on a roasting rack or oven safe pan
- Add buttered bread in the oven at the same time (watch closely until browned).
- While the bones are roasting chop parsley and onion. Add fresh lemon juice, capers, salt and pepper.
- Once the bones are removed from the oven add fresh grated kidchego goat cheese.
- Rub the warm toasted bread with a raw garlic clove.
- Serve bone marrow immediately with crispy bread and parsley salad.
Notes
Use the back of your knife to remove the excess meat and sinew.
The connective tissue removed from the outside of the bones can be fed to your pets raw or cooked (optional).
Add grated cheese while bones are warm so the cheese partially melts.
There is usually some oil left in the pan after roasting the bones. Add the oil to your salad or bread.
Substitute bread with zucchini or cucumber slices for a low carb meal.
