Ingredients
- (1-1/4 cup) Fresh Strawberries, chopped
- (1 Tablespoon) Strawberry Jam, 8oz
- (1 Tablespoon) Miller's Raw House Honey, 8oz (Glass)
- (1 cup) 1 quart - Greek A2/A2 Yogurt
- (1 cup) Granola (use your favorite granola or make it at home with the recipe link in instructions)
- (for garnish) Fresh Mint
- (2 cups) Organic Pre-Soaked Rolled Oats, 2lb
- (1/4 cup) Miller's Raw House Honey, 8oz (Glass)
- (1/4 cup) 1 quart - Beef Tallow for Cats & Dogs
- (1/4 teaspoon) Fine Celtic Sea Salt, 8oz
- (1/2 teaspoon) Homemade Vanilla, 4oz
- (2 Tablespoons) Pumpkin Seeds (Sprouted or Toasted)
- (2 Tablespoons) Pine Nuts (or other nuts or seeds)
- (1/4 cup) Coconut Flakes, coarsely chopped
- (1/2 teaspoon) Cardamom Powder (optional)
- (a handful) Raisins or dried fruit of your choice (optional)
Directions
Strawberry Yogurt Parfait Instructions
- Place the strawberries in a medium size bowl. In a small bowl combine the strawberry jam and 1 Tablespoon honey. Stir well. Add to the fresh strawberries and gently toss. Set the bowl aside for 10 minutes.
- Have 2 to 4 glasses ready to assemble the parfaits. Depending on the size of your glasses, you will be able to create either 2 or 4 filled glasses. Place a small amount of the Greek yogurt in each glass. Add a spoonful of the strawberries. Top with a spoonful of the granola. Alternate layers until you reach the top of your glasses. Decorate with a few slices of berries and the fresh mint.
Homemade Granola Instructions
(makes about 3 cups)
- Preheat the oven to 350 degrees Fahrenheit. Line a large, rimmed baking sheet with parchment paper.
- In a large mixing bowl, combine the rolled oats, sea salt, cardamon powder (if using), and nuts, seeds, and dried fruits. Add melted tallow, 1/4 cup honey, and vanilla extract. Stir well to thoroughly mix everything together. Spread the granola onto the prepared baking sheet in an even layer.
- Bake in the preheated oven for 10 minutes. Remove the granola from the oven and give it a stir. Return to the oven to bake for another 12 minutes. Remove the granola from the oven. Cool completely before using or storing in a covered container. The granola will get crispy as it cools.
Notes/Substitutions
- The parfaits are best served fresh to avoid the strawberries getting watery.
- Can sub maple syrup for honey
- Can sub coconut oil for beef tallow
