Strawberry Yogurt Parfait with Homemade Granola
Learn how to make yogurt parfait with healthy, homemade granola. My gluten-free granola recipe adds such nice texture to these cute yogurt parfaits. Use fresh strawberries and mint to add the perfect touch. I love to make these for breakfast or even a light dessert.

Strawberry Yogurt Parfait Instructions

  1. Place the strawberries in a medium size bowl. In a small bowl combine the strawberry jam and 1 Tablespoon honey. Stir well. Add to the fresh strawberries and gently toss. Set the bowl aside for 10 minutes. 
  2. Have 2 to 4 glasses ready to assemble the parfaits. Depending on the size of your glasses, you will be able to create either 2 or 4 filled glasses. Place a small amount of the Greek yogurt in each glass. Add a spoonful of the strawberries. Top with a spoonful of the granola. Alternate layers until you reach the top of your glasses. Decorate with a few slices of berries and the fresh mint.

Homemade Granola Instructions

(makes about 3 cups)

  1. Preheat the oven to 350 degrees Fahrenheit. Line a large, rimmed baking sheet with parchment paper.
  2. In a large mixing bowl, combine the rolled oats, sea salt, cardamon powder (if using), and nuts, seeds, and dried fruits. Add melted tallow, 1/4 cup honey, and vanilla extract. Stir well to thoroughly mix everything together. Spread the granola onto the prepared baking sheet in an even layer.
  3. Bake in the preheated oven for 10 minutes. Remove the granola from the oven and give it a stir. Return to the oven to bake for another 12 minutes. Remove the granola from the oven. Cool completely before using or storing in a covered container. The granola will get crispy as it cools.

Notes/Substitutions

  • The parfaits are best served fresh to avoid the strawberries getting watery.
  • Can sub maple syrup for honey
  • Can sub coconut oil for beef tallow
