Grass Fed Ancestral Blend Meatloaf

This ancestral blend meatloaf is super nutrient dense from the grass fed beef liver and heart! Not to mention it's higher in CLA's, protein, vitamins and surely is an easy and HEARTy way to get organ meat in your diet! ( And hide them from picky little kids!)

Ingredients
- (1 pound, ground) Beef Heart
- (1/2 pound, ground) Beef Liver
- (1 pound) Ground Beef
- (1 egg) 1 dozen - Brown Honest Yolk Chicken Eggs
- (1/2 minced) Yellow Onions (2lb)
- (2 cloves, minced) 8oz - White Garlic
- (2 teaspoons) Fine Celtic Sea Salt, 8oz
- (2 teaspoons) Ground Black Pepper
- (2 Tablespoons) Coconut Aminos
- (1 cup, to soak the liver in) 1 quart - A2/A2 Cow Kefir
Directions
- Pre-heat the oven to 350 degrees, and line a sheet 9x13 pan with parchment paper or spray with avocado oil, or butter the sides.
- Soak your beef liver in kefir--preferably overnight to get rid of some of the metallic taste OR do a quick soak while you are preparing the other ingredients.
- Cut up your beef heart in small chunks and run them through a meat grinder.
- Cut up the presoaked beef liver and place it through the meat grinder.
- Add the ground liver, heart and ground beef into a bowl together.
- Add in 1 egg, minced garlic, minced onion, salt and pepper, and coconut aminos. Mix until ingredients are fully incorporated.
- **Brush ketchup or BBQ sauce over the top of the meatloaf before baking. This is optional!**
- Bake the meatloaf at 350 degrees for 40 minutes. Let the meat loaf rest for 5-10 minutes before slicing to eat.
