Spicy Pork Tongue Tacos

Pork Tongue Tacos AKA Tacos De Lengua! Pork tongue is a muscular organ that has a mild flavor and a silky texture. When cooked properly, it's very tender and delicious making it perfect for tacos or tostadas. This easy one pot meal is flavorful and nourishing and a wonderful way to eat nose to tail.

Ingredients
- (1.5lbs) Pork Tongue
- (4-5 cups) Beef or Pork Broth
- (2.5 Tbsp) 1 quart - A2/A2 Ghee (Glass)
- (1/4 cup) 8oz A2/A2 Mozzarella Pressed Cheese
- (1/4 cup) 8oz Raw Mild A2/A2 Cheddar Cheese
- (1 dozen) Tortillas - Corn or Flour
- (1/4 cup, sliced) 8oz - Red Grape Tomatoes
- (2 cloves) 8oz - White Garlic
- (1 small, chopped/divided in half) 1lb - Red Onions
- (1) Bay Leaf
- (1 Tbsp) Chipotle Powder
- (1/2 Tbsp) Chili Powder
- (1/2-1Tbsp) Fine Celtic Sea Salt, 8oz
- (1-2 Tbsp, chopped for garnish) Cilantro
Directions
- Add the tongue, ghee, stock, garlic, half of a chopped red onion and spices to a crockpot. Turn to high and braise for 5 hours.
- After 5 hours remove pork tongue with tongs, and remove the thin outer skin. The skin will already be separating. Make a small incision with kitchen scissors, and the skin will peel right off.
- Once the skin is removed, slice the pork tongue thinly or into bite size pieces.
- Place the meat back into the pot of stock and braise for another half hour or so.
- Remove the meat with a slotted spoon into a bowl and set aide.
- Warm the tortillas on a hot plate or flat skillet with a little ghee until browned and toasty.
- Fill each tortilla with meat, grated cheese, cilantro, red onion, tomato or your favorite taco toppings.
Tips/Notes
Love heat? Add in extra pepper or top your tacos with hot salsa or hot sauce.
Not a fan of spicy? Omit the peppers and add your favorite herbs.
Serve with Mexican rice, beans or guacamole.
